Strawberry Gazpacho - Fat Hen - Johns Island
Fat Hen’s Chef Fred Neuville is known for using fresh locally produced products in his restaurant’s dishes. This contributes to the especially fresh flavors you expect to get at this Johns Island restaurant. Along with locally sourced bread, meat, vegetables and other products, the Fat Hen gets their fruits and berries from local farmers including a Lowcountry favorite, the strawberry.
Strawberries are plentiful in the Carolinas during the summer and for a July Sunday Brunch special, Fat Hen made a Strawberry Gazpacho. The soup consisted of fresh Carolina strawberries and cucumbers blended together and topped with a goat cheese and black peppercorn cream and fresh tarragon. The best way to describe this soup is very refreshing, particularly for a hot July day. The slight sweetness of the soup was complimented by the smooth and savory goat cheese and black peppercorn flavors along with a bit of brightness given by the anise flavor of the tarragon. But again, it should not be understated how refreshing it was to have this starter after walking inside from such a hot July day. If you are visiting the Fat Hen and the Chef has made Strawberry Gazpacho, don’t hesitate to order it.
