Greg's Tomato Pie
Enjoy this great tomato pie recipe from Greg Shealy
1 9 inch deep dish pie shell, baked and cooled
9 – 10 small to medium tomatoes, peeled and chopped
½ tsp salt
¼ tsp pepper
½ tsp fresh basil, chopped
1 tsp chives, chopped
3 green onions, chopped
2 medium onions chopped and sautéed
1 cup mayonnaise
1 cup shredded sharp cheddar cheese
Fresh grated Parmesan cheese to taste
Pre-heat oven to 300 degrees.
Place tomatoes in crust and sprinkle with salt, pepper, herbs and onions.
Combine mayonnaise and cheddar cheese and mix well.
Spread mayonnaise and cheese mixture over tomatoes.
Sprinkle parmesan cheese on the top and bake for 35 to 40 minutes.
Let cool for 25 minutes before serving.
