Meyer's Gaspacho
Ingredients
5 large tomatoes
1 medium Serrano pepper, fine chopped
5 garlic cloves, chopped
2 cucumbers, peeled and chopped
1 red onion, chopped
1 avocado, chopped
4 cups beef stock
2 tbsp lemon juice
2 tbsp red wine vinegar
¼ cup fresh cilantro, chopped
¼ cup fresh basil, chopped
1 tbsp extra virgin olive oil
Hardware
Large bowl
Rubber spatula
Ladle for serving
Directions
Put all ingredients into bowl and mix gently but thoroughly.
Cover and place in refrigerator overnight.
Mix again gently then ladle into bowls.
