Pee Dee Catfish Stew
Ingredients
1 ½ tbsp olive oil
1 ½ tbsp butter
1 can stewed tomatoes (broken up)
2 cups potatoes (peeled and small chopped)
2 cups chopped onions
1 can tomato sauce
¼ cup ketchup
1 tbsp Worcestershire sauce
¼ tsp hot sauce
1 tsp salt
½ tsp pepper
1 lb catfish

Directions
Over moderate heat add olive oil and butter to the pot.
When butter has started to melt, stir in onions, then cover and allow to cook 5 minutes.
Stir in tomatoes, potatoes, Worcestershire sauce, tomato sauce, ketchup and hot sauce with the onions.
Stir in salt and pepper.
Simmer 30 minutes.
Stir in crumbled bacon and catfish
Cook about 10 minutes or until the fish flakes easily.
Plating
Catfish stew is usually served in a bowl but can also be enjoyed over a plate of rice or grits.
