Maple Cider Pork Brine
1 tbsp peppercorns
2 rosemary sprigs
½ cup Kosher salt
¼ cup brown sugar
4 large garlic cloves, chopped
1/3 cup maple syrup
¼ cup apple cider vinegar
3 cups water
2 cups ice cubes
Bring water to a light boil then reduce heat to a simmer.
Stir in all other ingredients except ice cubes.
Simmer for 3 minutes and remove from heat.
Let brine cool for 5 minutes then add ice cubes.
Stir well until ice cubes are melted.
Let cool completely before brining pork.
