Honeydew Bellini Salsa
Use this recipe to for a fresh topping for fish, chicken or pork. Or you can make it for a refreshing dip for chips.
2 fresh peaches diced into small cubes
½ cup honeydew diced into small cubes
½ cup tomato diced small
1 jalapeño pepper diced small (For less spice, use ½ bell pepper)
1 small onion
1 medium clove garlic
2 tbsp lime juice
Lime zest from 1 lime
½ bunch cilantro chopped
1 tsp Kosher salt
¼ tsp pepper
¼ cup champagne or sparkling wine
Combine all ingredients into bowl and turn with spatula until thoroughly mixed.
Let sit at least 1 hour and mix again.
Serve over fish, pork or chicken,
With Benne wafers, fried plantain chips, sweet potato crackers, or Carolina white crackers
