Williamsburg Watermelon Salad

This watermelon recipe from Williamsburg, SC makes a refreshing summer dish.


2 cups of watermelon, cut into ¼ inch cubes.

4 ounces country ham, thinly sliced

1 cucumber, sliced

2 green onions, sliced

¼ cup fresh mint, thinly sliced

2 tbsp fresh lime juice

1 tbsp extra-virgin olive oil

Kosher salt

Fresh ground pepper



Baking sheet

Medium bowl



Pre-heat oven to 400 degrees.

Spread sliced country ham our evenly on the baking sheet.

Place baking sheet in oven. Bake for 7-8 minutes or until the ham starts to crisp.

Remove from oven and let cool.

Toss all ingredients except country ham in a bowl.

Divide salad evenly and plate.

Sprinkle even amounts of country ham over the top of each plate.
