Greg's Bread and Butter Pickles

This recipe from Greg Shealy makes delicious Carolina Bread and Butter Pickles.


1 gallon cucumbers, sliced paper thin, not peeled

6 medium onions, sliced paper thin

½ cup salt

Crushed ice

4 cups white vinegar

½ cup water

4 cups sugar

1 ½ tsp turmeric

½ tsp ground cloves

2 tbsp mustard seeds

½ tsp celery seed



Very large covered plastic container.

Large pot.



Combine cucumbers, onions and salt with lots of ice in the very large container.

Place in refrigerator for 3 hours.

Drain well and remove ice.

Rinse and drain cucumber/onion mixture.

Mix sugar, turmeric, cloves, mustard seed and celery seed thoroughly.

Stir in the vinegar, water, and sugar/spice mixture with the cucumber/onion mixture. Mix thoroughly.

Add to large pot, heating to just before the boiling point but DO NOT BOIL. Stir frequently.

Cook until cucumbers are no longer bright green.

Pack pickles and liquid into sterilized quart, half-pint or pint jars, then seal jars.
