Chisolm Creole Chicken

This is a great recipe with light spice and plenty of zing!


4 chicken thighs or leg quarters, skin on

1 tbsp black pepper

2 tbsp salt

1 red pepper, chopped

1 large onion, chopped

4 large cloves garlic, chopped

5 cups Carolina Coast Creole Marinade (See Recipe HERE)

2 tbsp fresh oregano, chopped

1 tbsp fresh thyme, chopped



Casserole dish



Pre-heat oven 375 degrees.

Marinate chicken in Carolina Coast Creole marinade.

Add chicken and marinade to casserole dish.

Add salt, black pepper, red pepper, onion, garlic, oregano and thyme over the top of the chicken and to the sides.

Bake for 1 hour or until chicken is starting to fall apart.



Can be served by itself in a bowl or over rice.
