Carolina BBQ Hash
Use this recipe to make hash in your crock pot at home!
5 lbs Boston butt roast
2 large baking potatoes, peeled and diced
3 medium onions, peeled and diced
1 stick butter
5 tbsp white vinegar
4 tbsp tomato paste
2 tbsp Worcestershire sauce
5 tbsp mustard based BBQ sauce (Shealy’s, Duke’s, Bessinger’s will do)
1 tbsp dry mustard
salt and black pepper to taste
5 quart crock pot
Rub roast with salt, pepper and dry mustard.
Put roast in crock pot.
Add the diced potatoes and onions.
Fill the pot with chicken stock and cover.
Set the crock pot on high.
Cook for around 6 hours or until meat falling apart.
When meat is falling apart remove the meat from the pot.
Reduce the heat on the crock pot to the lowest setting.
Pull meat apart very well, removing bone and fat and let cool.
Break up the potatoes and onions.
Return the meat, potatoes and onions to the crock pot.
Add the butter.
Cook one hour.
Add rest of seasonings and BBQ sauce.
Serve over grits or white rice.
