Carolina Buttermilk Biscuits
Buttermilk biscuits grace breakfast tables all over the Carolinas everyday. Try the recipe below for fluffy buttermilk biscuits.
2 cups flour, sifted
1 tbsp baking powder
¼ tsp baking soda
8 tbsp butter, softened
¾ cup buttermilk
½ tsp salt
Baking sheet or sheet pan
Circular dough cutter
Pre-heat oven to 450 degrees
Put flour, baking soda, baking powder and salt into bowl.
With electric mixer, blend well the previous ingredients on slow speed.
Reserve 2 tbsp of butter, then add the rest to bowl with blender still on slow speed
Slowly add buttermilk with blender still on slow speed.
When thoroughly mixed, remove dough to floured surface and knead for 1 minute.
With the rolling pin, roll out to ¾ inch thickness.
Cut into round pieces.
Re-knead dough and roll until most of dough is used.
Place dough circles on greased sheet pan or baking sheet.
Melt remainder of butter.
Brush butter on top of each dough circle.
Bake for 14-16 minutes.
Let stand for 5 minutes to cool.
